Pretzel bites

As soon as I saw these pretzel bites on 17 and baking, I wanted to make them. How can you go wrong with peanut butter and chocolate? I can tell you, they only lasted a few minutes in our house!


Peanut Butter Pretzel Bites

Adapted from 17 and baking, adapted from Foodaphilia
Makes around 45-60 bite sizes sandwiches

1 cup creamy peanut butter
2 tsp butter, room temperature
2/3 cup powdered sugar
1/4 tsp vanilla extract
Pretzels
2 cups bittersweet chocolate chips

In a small bowl, beat the peanut butter and butter together until smooth and creamy. Beat in the powdered sugar, and vanilla extract until well mixed – you may need to add more powdered sugar to get the filling thick and stiff enough to hold its shape.

Roll teaspoons of the peanut butter mixture between your palms to form balls. Sandwich between two pretzels and put on a plate or cookie sheet. Freeze the pretzel sandwiches for half an hour.

Melt the chocolate chips, using the microwave (30 second intervals) or a double boiler. Dip half of each pretzel sandwich in chocolate. Return the tray to the freezer and chill until the chocolate sets. Store the Peanut Butter Pretzel Bites in the refrigerator or freezer until serving time. Enjoy!

Knit Hat Pattern

There is such a wonderful feeling in completing a knit hat, and one of the wonderful things about it, is, you can wear it all around town. That is, if it's winter. Lately this has been the only thing I've been knitting. Every one in the family now has one!


Size
Instructions are written for one size and
pulls in or stretches to fit most adult. Knitted Measurements Head circumference (slightly stretched) 18''/45.5cm
Materials
-Two 31/2oz / 100g balls (each approx 110yd/100m) of Naturwolle/Muench Yarns Black Forest Yarns (wool) in #12 soft
I used one 6oz (170g) (approx 185 yds/ 169 m) of Lion Brand Yarn -Homespun- With size 10/6mm needles
-One pair size 8 (5mm) needles or size to obtain gauge
How to Rib
Row one: *K4, p4 rep from * to end Row two: K the knit and p the purl sts. K=knit
P=purl
tog= together
sts= stitches

-Now for the Hat-
Cast on 72 stitches. Work in k4, p4 rib for 8 inches/20.5cm
I only knit it for about 6 inches because
I didn't want a roll on mine. Then I crocheted a
flower on it with this pattern (as shown in the picture above):


After you knit the 8 (or 6) inches you...
Shape Top
Row 1: *K1, k2tog, k1, p1, p2 tog, p1; repeat
from *to end-54 sts.
Row 2: K the knit and p the purl sts.

Row 3: *K2tog, k1, p2tog, p1; repeat
from * to end-36 sts.
Row 4: K the knit and p the purl sts.

Row 5: *K2tog, p2; repeat from * to end
-27 sts Row 6: K the knit and p the purl sts.
Row 7: *K1, p2tog; repeat from * to end
- 18 sts
Row 8: K the knit and p the purl sts.
Row 9: *K2tog; rep from * to end- 9 sts.
Cut yarn leaving a long tail for sewing.
Thread tail through yarn needle and pass it through each stitch, pulling tightly to close the top. Sew back seam using vertical. If you have a roll, roll it up and tack down. Weave in ends.
